To Eat: Cozy Recipes for Cold Days

The Best Veggie Chili (Hearty, Smoky, Comforting)

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 bell pepper, diced

  • 1 zucchini, diced

  • 1 cup corn (fresh or frozen)

  • 1 can black beans

  • 1 can kidney beans

  • 1 can diced tomatoes

  • 2 tbsp tomato paste

  • 2 tsp chili powder

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1/2 tsp cinnamon (trust the process)

  • Salt and pepper to taste

  • 1 cup vegetable broth

Instructions:

  1. Sauté onion and garlic in olive oil until translucent.

  2. Add bell pepper and zucchini, cooking until softened.

  3. Stir in tomato paste and spices, letting them bloom for 1 minute.

  4. Add beans, tomatoes, corn, and broth.

  5. Simmer uncovered for 25–40 minutes until thick and cozy.

  6. Finish with a squeeze of lime and top with avocado, sour cream, or cilantro.


 

Overnight Garden Focaccia (Edible Art)

Overnight Dough Ingredients:

  • 500g bread flour

  • 10g salt

  • 7g instant yeast

  • 425ml warm water

  • 2 tbsp olive oil

Instructions (Night Before):

  1. Mix flour, salt, and yeast.

  2. Add water and olive oil, stirring until shaggy.

  3. Cover and refrigerate overnight.

Morning Bake:

  1. Drizzle olive oil in a baking pan and transfer dough.

  2. Let rise for 2 hours at room temperature.

  3. Dimple the dough with your fingers and drizzle more olive oil.

Garden Toppings (Arrange like flowers):

  • Cherry tomatoes (petals)

  • Red onion slices (stems)

  • Rosemary or thyme (leaves)

  • Bell peppers, olives, or thinly sliced zucchini

  4. Fold in flour, cocoa powder, and baking powder.

  5. Add dark chocolate chunks.
